Campfire Thanksgiving Turkey
You don’t need an oven to enjoy a juicy, perfectly seasoned turkey. With a sturdy fire pit, cheesecloth, foil, and a generous bed of coals, you can roast a bird to golden perfection.

Prep Time: 30 minutes
Cook Time: About 3 hours (or 1 hour per 4 lbs)
Servings: 8–10

Ingredients
• 12–14 lb turkey
• 1 cup olive oil
• 1 tsp each: rosemary, sage, thyme, chopped parsley
• ½ tsp each: salt and black pepper
• Pre-cooked stuffing

Instructions
•Build a fire pit large enough for the turkey, filling the bottom with 2 inches of hot coals.
• Clean and season the turkey with the herb mix and olive oil. •
• Stuff with pre-cooked stuffing.
• Wrap the bird in cheesecloth and then three to four layers of foil.
• Place on the coals, cover completely with more hot coals, and roast until cooked through.

Campfire Pumpkin Pie
No Thanksgiving feast is complete without pumpkin pie. With a pie iron or dutch oven and a little prep, you can enjoy this classic dessert right at your campsite.

Prep Time at Home: 2 hours
Prep Time at Campsite: 30 minutes
Cook Time: 15 minutes (pie iron) or 25 minutes (dutch oven)
Servings: 8

Crust Ingredients
• 2½ cups all-purpose flour
• 1 tsp sugar 1 tsp salt 2 sticks unsalted butter, cubed

Filling Ingredients
• 2 cups pumpkin puree
• 1½ cups light cream
• 3 large eggs
• 1 cup brown sugar
• 1½ tsp ground ginger
• 1½ tsp cinnamon
• ¾ tsp nutmeg
• ½ tsp salt
• ¼ tsp cloves or allspice

Instructions
• Prepare pie crust and pumpkin puree at home (or puree pumpkin at the campsite).
• Line your pie iron or buttered dutch oven with the crust.
• Mix filling ingredients, pour into crust, and cover with a top crust.
• Cook over the campfire until the crust is golden and the filling is set.
